Okay definitely not hating on chalupas here, they’re amazing.
But one of my goals for this year is to eat a lot more vegetables. I think that’s probably on a lot of people’s resolution lists.
I’m trying to cut back on meat a little bit lately, and I want to replace meat-heavy meals with some more veggie-centric ones. But thinking of ideas for healthy meals isn’t always easy!
And sometimes it’s just a lot easier just to have some Annie’s mac n cheese or a bowl of cereal for dinner (not going to admit how often I do this at 27 years old). But I’m trying to do a little less cereal and a little more whole foods this year.
Eating vegetables can be a chore if you don’t approach it the right way. But when you incorporate vegetables into delicious, hearty dishes, you won’t be able to resist loving them!
So I’ve put together a list of fifteen healthy, delicious, veggie-packed meals for when you’re feeling the need to get some more green stuff (mint chocolate chip ice cream excluded) in your diet.
And as a bonus, almost all of these meal ideas are simple and easy to throw together!

1. Stir Fry
Stir fry is a really easy way to get a bunch of vegetables into one meal. Basically, you can throw whatever veggies you want into a pan, add some meat or tofu, some stir fry seasoning. And voila, you’ve got yourself a super easy, healthy meal. Some of my favorite veggies to throw into a stir fry are onions, broccoli, mushrooms, and string beans. 2. Black Bean Burgers
Black bean burgers are delicious, super hearty, and just as satisfying as a traditional beef burger. Made mostly with mashed black beans, these veggie burgers are also high in protein. This recipe from Tastes Better from Scratch includes spices like cumin and chili powder to give the burgers a slight kick. Pair them with these organic sweet potato fries and you have the perfect meal. Trust me you will love these veggie burgers!
3. Quinoa Taco Bowl
My friend first made me a quinoa taco bowl a couple of years ago, and I couldn’t believe how awesome it tasted! Since then I’ve made them several times. I use this organic taco seasoning to make my quinoa taco bowls. This dish is super healthy, made with a variety of fresh taco toppings on a bed of seasoned quinoa and black beans. 4. Veggie-Packed Soups
What better way to get in your vegetables than to eat them in a warm, delicious soup? There are so many options for veggie-packed soups. This article from Eating Well lists thirty yummy vegetable soups to try out. The butternut squash soup, ravioli and vegetable, and the potsticker and vegetable soup look especially delicious. If you don’t feel up to making your own soups, Thrive Market has some awesome options for healthy organic pre-made soups. You can try out an organic lentil and vegetable soup, organic split pea soup, or sweet potato red lentil soup.
5. Mediterranean Veggie Wraps
Mediterranean-style veggie wraps with hummus are full of vegetables and super satisfying. I’ve had these for lunch many times and they’re really tasty. You can put whatever vegetables you choose into this wrap. This hummus veggie wrap recipe calls for cucumber, fresh spinach, tomatoes, avocado, broccoli sprouts, and microgreens. Pair your wrap with some kettle-cooked sweet potato chips and you’ve got the perfect healthy meal.
6. Buddha Bowls
Buddha bowls, also called power bowls, are made by assembling a grain like quinoa or rice with vegetables and often some kind of protein and dressing. 7. Fajitas
Fajitas are kind of like stir fry, but wrapped up in a tortilla. This Mexican dish is usually made with peppers and onions, but again you can add in whatever veggies you like for added nutrition. 8. Sheet Pan Dinners
Sheet pan meals are an easy way to prepare a nutritious meal using only one baking pan. Often, a sheet pan meal is made up of some kind of meat paired with some kind of vegetable. Sheet pan dinners require minimal prep time and the best part is, only one pan to clean! If you need ideas, here are twenty healthy sheet pan dinners you can make. The mahogany chicken with broccoli looks soo good.
9. Pasta Primavera
Pasta primavera, which translates to “spring pasta,” is basically pasta prepared with a variety of colorful vegetables. This recipe calls for asparagus, broccoli, bell pepper, peas, zucchini, and tomatoes. Again, you can use whatever variety of veggies you choose. This veggie-packed pasta is traditionally topped with a light lemon parmesan cream sauce…um yum.
10. Couscous with Vegetables
My friend from Italy actually introduced me to this dish and I was immediately hooked! She prepared the couscous with asparagus, broccoli, cherry tomatoes, and olive oil. She actually mixed in chopped hard boiled eggs as well! This dish is so simple and yet so filling and nutritious. 11. Veggie Fried Rice
Veggie fried rice has got to be one of the easiest high-veggie meals you can make. Simply make some rice, saute some vegetables, combine with soy sauce/optional seasonings, add an egg and you have yourself a delicious healthy meal. This veggie fried rice is especially colorful and pretty.
12. Chili
Chili is one of those comfort foods that is hard to believe can actually be good for you. Of course, incorporating as many veggies as you can will up the nutrition level of this yummy warming dish. In my chili, I like to include onions, celery, carrots, kidney beans, and peppers. You can add more vegetables, of course, like sweet potatoes, corn, and mushrooms. In fact, the veggies in chili are so hearty that you don’t even need meat if you choose to leave it out! This vegetarian chili recipe looks amazing and is full of nutritious vegetables and plant-based protein.
13. Hearty Salads
I couldn’t really create a list of veggie-packed meals without including salads. I know…salad. But hear me out. Forget the iceberg lettuce smattered with carrot shavings. These 50 mouthwatering salads are filling, hearty, and absolutely packed with vegetables– and other great stuff like quinoa, pasta, sweet potatoes, and nuts. You’ll never get bored of salads as long as you know how to do them right.
14. Curries
If you want a flavor-packed meal full of veggies, curry is the way to go. A little bit of curry sauce can make pretty much anything taste good. My favorite curry is massaman curry with chicken, onions, carrots, and potatoes. Another favorite of mine is Thai green curry. This recipe for vegan Thai green curry includes carrots, green beans, peppers and broccoli. So good.
15. Veggie-Packed Pizza
Finally to round off this list of veggie-packed meals, we have everyone’s favorite weekend food…pizza. Pizza can be pretty healthy when you make it at home and top it with your favorite vegetables. My veggies of choice are spinach, mushrooms, onions, and olives. This Ultimate Veggie Pizza recipe calls for spinach, artichoke, peppers, onions, cherry tomatoes, kalamata olives, and almond slivers.
